What is the MICHELIN Guide?
The MICHELIN Guide is the world’s most influential restaurant guide. Inspectors visit anonymously and publish an annual selection of restaurants, awarding distinctions based solely on the quality of the cooking. Stars indicate outstanding cuisine; separate awards include Bib Gourmand for great value and the Green Star for sustainability leadership.
What do MICHELIN Stars actually mean?
Stars are about the food on the plate. Service, décor and ambience are noted but do not drive the star award. Inspectors apply five universal criteria: ingredient quality, mastery of technique, harmony of flavors, the chef’s personality expressed in the cuisine, and consistency across the menu and over time.
- One Star: high-quality cooking, worth a stop
- Two Stars: excellent cooking, worth a detour
- Three Stars: exceptional cuisine, worth a special journey
Bib Gourmand vs Stars
Bib Gourmand highlights places where you eat very well at a moderate price (value varies by city). Cooking is simpler and recognizable, but delicious and great value — ideal for casual nights out.
What is the MICHELIN Green Star?
Green Star celebrates restaurants leading the way in sustainable gastronomy — from responsible sourcing and seasonality to waste reduction. It’s not a quality grade like stars, but a signpost for eco-leadership in dining.
MICHELIN Guide Dubai 2025 at a glance
At the 2025 ceremony in Dubai, MICHELIN revealed a selection of 119 establishments across 35+ cuisines. Headlines this year:
• Two restaurants achieved Three MICHELIN Stars for the first time in Dubai: FZN by Björn Frantzén and Trèsind Studio
• Two new restaurants earned One Star (Jamavar and Manāo), bringing the total to 14 one-star restaurants
• Five new Bib Gourmands were added; Dubai now has 22 Bib Gourmand addresses
“Selected” restaurants explained
Every year, inspectors also add “Selected” restaurants — recommended places that meet MICHELIN’s quality bar, even if they don’t hold a Star or Bib. Additions can appear online throughout the year; distinctions are awarded at the annual reveal.
